    Sweet potato pancakes and a perfect lightly fried egg.

    Pancake ingredients: grated sweet potato, 1 egg(surprisingly had 2 yolks!), tblsp of almond flour, scallions, s & p, unsalted butter

    Amazing!

    No. That’s a latke with a fried egg. Stop it.
